Snack Attack: 60-Second Broccoli Salad

I absolutely LOVE to snack!  In fact, I usually rack up more calories a day from all of my snacks than from my 3 "meals" combined.  [Side note: I use the MyFitnessPal app on my iPhone to log my calories in and out each day,]  Although that sounds a little crazy, I purposefully eat small meals to allow for my love of snacking.  

Obviously, I just love to be eating almost all the time.  In an effort to continue fitting into my skinny jeans, I am constantly looking for low-calorie yet satisfying snacks.  Enter: my 60-second Broccoli Salad.

This is my go-to after school snack when I'm alone and craving something crunchy yet healthy.  AND EASY.  I can make a seriously delish broccoli salad with all the bells and whistles, but this is for when you just want a snack NOW!

All you need is 3 ingredients...
Raw Broccoli + Raw Cashew Pieces + Light Miracle Whip 
(or light mayo if you aren't an MW fan like I am)

Cut the broccoli and dump into bowl (or just tear the pieces off like I do because yes, I'm THAT lazy good with my hands).  

Grab a little handful of cashew pieces and dump into said bowl.  

Add a squirt of Miracle Whip, about a tablespoon.

Stir it up, and crunch away!

No, it's not as good as real broccoli salad, but my taste buds think it's pretty damn yummy.

  1. I am definitely a huge snacker! I also purposedly eat small meals to allow for snacking. When my blood sugar gets too low I am one unhappy camper! :)
