Salsa Chicken & Jalapeno Mashed Potatoes

This meal is so easy, that I almost feel guilty when Hungry Hubby thanks me for making it. Almost.


The line-up is short and sweet!

For the chicken:

  • Boneless, skinless chicken breasts (I used 3)
  • Taco or Fajita seasoning
  • Salsa, we use medium in the HHHH house
  • Cheddar cheese
  • Guacamole (you can omit this, but who would want to!?!?)



For the 'taters:

  • 2 baking potatoes
  • Sour cream
  • Jalapenos, diced
  • Cheddar cheese
  • Butter and/or milk

I didn't have butter or milk, so these were made without either. They weren't as moist, but still delicious!

The Chicken How-To...

Sprinkle seasoning on both sides of the chicken, then smother it with salsa. Bake at 375 for 30ish minutes.






Take it out, and add the cheddar. No need to measure, just dump some on! Pop it back in the oven for another 5 minutes.



Five minutes later...



The Potato How-To...

If your hungry hubby prefers his mashers skinless, peel now. Cut potatoes into large chunks or cubes. Nuke 'em for about 8 minutes.



Use a fork, or a potato masher if you're smart, and go to town! If there are some chunks that won't mash, put them back in the microwave for another minute or so. Add your butter and/or milk as you mash... it'll help those babies along.

Add the sour cream (big spoonful), cheese, and diced jalapenos and mash some more.
(You have my permission to count this as your arm workout for the day.)



Ta-da!




The Healthy-Honey Adjustments...

I ate half of a chicken breast and a scoop of the mashed potatoes with a salad. Said salad included chopped roma tomato, avocado, and chickpeas.

Aren't avocados such great food porn objects for photography!? Love.




I made sure to make my next day's lunch salad while I was already choppin.'
