Curried Shrimp and Potatoes with Cauliflower & Green Beans (A One-Pan Dish!)

If the hungry man in your life is anything like mine, it's tricky to convince him to eat vegetables like cauliflower and green beans unless they're slathered in butter and cheese.  This recipe will get him eating both, and happily so!

This fantastic recipe was inspired by a recipe in Hungry Hubby's Men's Health magazine.  I added the potatoes, some cayenne pepper to make it a lil' spicy, and cooked it far longer than they suggested (it def wasn't done in their timeframe).  


The Line-Up


  • Raw shrimp, tail-off, peeled & deveined (I used 1 lb.)
  • Red potatoes, chopped into bite-size pieces
  • Cauliflower, 1 head, broken into bite-size pieces
  • Raw green beans, about 2 handfuls
  • Olive oil
  • Curry powder
  • Cayenne pepper (optional)
  • Salt & Pepper
Toss the potatoes and cauliflower with some olive oil, curry powder, cayenne pepper, salt & pepper.  Place the potatoes and cauliflower in a foil-lined baking pan.



Put it in a 400-degree oven for about 30 minutes.
I may or may not have popped one of these babies in my mouth at this point.  Just testing their "doneness."  ;)

I made the mistake of buying raw shrimp that were not peeled, so I had the joy of peeling all my thawed shrimp.  Fun.

Cut the ends off the green beans.

Add the raw shrimp and green beans to the pan.  Leave them on top.  Add a very small sprinkling of the cayenne pepper, salt, and pepper.

Bake in the 400-degree oven for another 15-20 minutes.

Healthy Honey and Hungry Hubby are both more than happy to devour this dish!  :)

SO good!  And like always, SO easy!


The best part of this dish might just be the clean-up... toss the foil in the trash and stick the cutting board and knife in the dishwasher.  Consider this heart melted.

If you eat shrimp, PLEASE try this!  Hungry Hubby put this in the "restaurant quality" category.  I love impressing him with recipes THIS easy.

  5. @Whitney - YES, broccoli works. We loved this dish so much, I re-made it a few nights later with broccoli and asparagus instead of cauliflower and asparagus!
